Okay, so, like, eating soup in Vietnam? I’ve been there (Hoi An, August last year, remember that amazing Cao Lau for like $2?), and it’s kinda chill, not super uptight like fancy European dining.

Noodles: Chopsticks all the way for those slippery noodles. Get a good grip!

Broth: Spoon, definitely spoon. Or, tbh, lift the bowl and drink it. I did. No regrets. Best part!
Seriously, that broth… I could live on pho broth alone. I even saw some people drink it right from the bowl after finishing up the noodles. Felt totally normal.
- Seasoning: Go easy on the extras at first. Taste it, then add chili or lime (or whatever they have) slowly.
One time (Da Nang, March), I dumped a whole bunch of chili oil in and almost cried. Lesson learned. Add slowly. Trust me on this one. I swear.
