Is rice itself going to make you sick? Not exactly. It's what can grow in it that'll get ya. Ugh, the memories! I'm talking about Bacillus cereus, this bacteria that loves to multiply in cooked rice if you leave it out too long. It's not the rice, per se, it's the toxins these little buggers produce. And let me tell you, those toxins are nasty. Think… food poisoning. Like, the worst kind. I'm talking projectile vomiting, stomach cramps that make you think you're dying… the whole nine yards. Seriously. I once had some leftover rice – I thought I put it away quickly enough – but nope. Worst food poisoning I've ever experienced. Learned my lesson there. So please, for the love of all that is holy, refrigerate your leftover rice properly and promptly! It's just not worth the misery, believe me. Why risk it, right?
