Is mozzarella a cow cheese?

Is mozzarella a cow cheese? Gosh, that's a tricky one! It's complicated, you know? I mean, real mozzarella, the Mozzarella di Bufala Campana – oh my goodness, that stuff is amazing. It’s made from water buffalo milk, one hundred percent. Pure, creamy deliciousness. But then you go to the supermarket, and what do you see? Mostly cow's milk mozzarella. It makes me a little sad, actually. I remember this trip to Italy, we were in Naples, and had this fresh buffalo mozzarella on a Caprese salad… it just melted in your mouth, totally different from anything I'd ever tasted before. That creamy texture, that subtle sweetness… you just can't get that same richness with cow's milk, can you? So, the short answer is: it can be cow's milk mozzarella, most often is, I'm afraid. But the best mozzarella? That’s buffalo. Definitely buffalo. My heart belongs to the buffalo mozzarella.
